They will stock pickup sized magnets

I live in Canada. I'm looking for an alnico III magnet to get the sort of tone the Jimmy Page Burstbucker has.

The magnet is only part of the equation - the wind of the pickup is in many ways much more important. The nature of the Duncan 59 makes any magnet work quite well......but you are not going to get the tone of that other pickup simply with a mag swap. I'd get an A2 and UOA5 as well as your A3 so you have options.

The surface. Magnets are cast in sand. The polished ones are cast oversize then ground smooth for a consistent finished size. Large makers prefer this as especially for high output pickups it makes for less microphonics due to assembly issues.

It is said that rough supposedly rounds off top end. I have not heard this myself but it is possible I suppose.

What is the difference between rough and polished

The act of polishing a rough cast magnet won't change the magnetic properties of the alloy. If you buy both and they're different, it would have to be a difference in the alloy, not the texture alone. For example, the rough magnet you receive might have been cast, and the smooth magnet might have been sintered.
