The Seymour Duncan Custom Shop offers a Strat pickup in a humbucker casing.

I seriously think about getting one, too.

What you really want here is something that doesn't have the passive polepieces and the magnet outside the coils, what you want is something with rod-shaped magnets in the coils.

You can also get a single coil sound from a Phat Cat/P-94/etc. It won't be as thin-sounding as a Fender single coil (and you may need to swap a magnet or two), but you can get a much more open tone than with a HB.

Why not just buy one of the HB-sized casings that hold Fender pups?

I know they are the dark side, but the Dimarzio Humbucker from Hell was built as a humbucker that sounds like a single coil. Its usually only used on the neck due to brightness issues in the bridge position.

Don Grosh had a proprietary pickup wound for him by DiMarzio that was based on the HfH and apparently was only slightly altered from the baseline HfH. I have that pickup in the bridge slot of my Grosh Retro Classic and I wouldn't say that it has "brightness issues" in my guitar, which has an alder body and maple neck and fingerboard.

... forgive my pathetic nitpicking... but if you want that classic, Jimi single-coil vibe... you gotta remember he used a Strat with the magnetic polepieces set in the "right" places. That Custom Shop "single-coil in a humbucker" thingy has the polepieces sitting in the wrong spot for copping Jimi (the poles are placed in the middle of the pup casing). So that one's not going to sound *exactly* like a Strat unless it's going to be placed in the center position of a three pickup guitar. You can probably request the Custom Shop place the polepieces in the more Strat-accurate spots (reverse-angled magnets for a Hendrix-like bridge pup; placed in the center for middle positiion; placed closer to the top fret for the neck spot, etc.). Then you'd definitely be talking Jimi, and getting closer to that tone too... *IMO*...
