So you know, there are at least a dozen videos of this on You Tube as well. I don't have any direct links saved, as doing this kind of job is kinda my specialty. Once I have the harness and the modded p'ups ready, from taking out the old harness and p'ups to having a fully-assembled and functioning instrument, it takes me about 45 minutes, an hour if I throw in a setup as well. ;)

So, do a search, you won't be disappointed.

Regarding the tubing, at the hardware store they have quite a few shapes and sizes. I wonder what size is necessary in order to have it a) fit through the hole b) clutch the knurled shaft and c) fit through the nut and washer while allowing them to pass over the bulge where the tubing and the knurled shaft meet, and onto the threads of the pot.

Like another commentor said in that thread, heat shrink tubing sounds like a great way to go.
