Keep in mind Duncans can be VERY bright so 250-300k pots are recommended. Dimarzios tend to be warmer and darker. To me, I like the added warmth and smoothness of Dimarzios but we all have a preference. With the right pots and caps I got what I want with the stock Gibsons and PRS pickups. For example, the Burstbucker Pros are some of the best pickups I have ever heard with 300k pots. They even smoke with 500ks assuming you use the tone control. The C-5 is nice but I can even get PAF tones with the Rio BBQ and JB. There are ways to tweak for the tone besides the p'up.

i like the brightness so i think that is good
and i have the tone knob that i can use if it is too much
i am gonna put a .047 cap on the tone knobs which i am hoping will make the tone knob even more usable

.047 should only make a differenc eon the roll off....but other may know for sure!
It will be a dark roll off. Just use 300ks!!!!!!!!

i am heavily considering the 59 but i can't find anywhere online that stocks the gold cover 4 conductor

If it's a bolt on neck Ibanez, then the next thing you should consider is whether it's a "bent top" or a solid top. Lots of those old Japanese LP copies (including my PF250) have pressed bent tops that create semi-hollow cavities underneath. If you tap on the top on the bass side you'll hear the hollow resonance. If that's the case, then in my opinion it would change my pickup choice drastically. I've got a Schaller Golden 58 in the neck of mine, which is a pretty hard sounding pickup. But the guitar is so "poppy" sounding acoustically that it anchors the sound, probably like what you'd get from the 59N. The PGN would sweeten it, and the unpotted Seth would make for a wildly open, unbridled vintage box that would be so fun to play, that you've got me thinking about putting a set into mine.
If it's a solid carved top, then all the standard rules apply, and you can take the advice of everyone here, and yes the 59 set would be great.

It depends on how much overdrive you'll use. The Seths are unpotted, and very open sounding. But under classic rock overdrive they can feedback, and in my experience, the hollow top only adds to the issue. I had an unpotted custom wound bridge pickup in mine and it was hard to control. If you were mainly playing loud cleans and Fendery sounds it would be fine. If you're going to go with Marshally classic rock overdrive, then the Seths in that guitar could be too open in the midrange. If that's the case, the 59's are a great choice, or you can order wax potted Seth Lovers as a Shop Floor Custom.

Gibson covers won't work with Duncans. The pole spacing is off by a tiny bit.
I think it's always better to order them factory potted with the covers on. That way, you're getting tightly sealed pickups that resist squeal better than if you did it yourself.
Always specify 4 lead when ordering, because some sets like 59s and PG's come with wire braided leads as well.
My best "classic LP" is a Custom Shop Brobucker (10K PAF) and PGn. The C-5/Jazz would also be great in your guitar.
