In theory, yes, but adding an extra circuit somewhere along the line could affect the tone in some way.

Yes, it's possible. The easiest way to do it is to use a 3PDT stomp switch. You can wire for true bypass and an LED at the same time. What pedal did you want to try this on? Most older pedals are fine, but some pedals have the components soldered directly to the circuit board, in which case it's nearly impossible to replace the switch.
