I use photoshop, but I just do wiring diagrams for myself. Real schematics likely would be done with a CAD program. Something like Visio/Office might come with electronic symbols you could make a diagram with.

I use a freeware program called ExpressSCH which comes as a tag-along program to another freeware program from the same company called ExpressPCB. Brandenburg turned me onto it. It works great, but you have to design your own guitar-oriented components so there's some initial setup time involved.
