Of those two diagrams, I'd also lean towards the 2nd diagram. If you wanted to put the 3rd push/pull to use, you could wire it up to be a master split. The volume pot would be the master split (the other two would be defeated with the volume pot "up").
If you're open to additional ideas, I'm a huge fan of Artie's Coil Swap Mod with Splits. It uses 2 push pulls, and effectively runs 1 coil from each humbucker in series with each other. I assume a search would return results with diagrams. I have 2 guitars wired up this way. I like to rotate the neck pickup 180-degrees (so screw coil is closer to bridge) so that the coil swap results in inner/outer modes for greatest range in tones.
