I guess I'm lucky in my town. Lots of shops, and occasionally, some cool stuff. Note the cool Ibby Artcore hollow body I posted about a few months ago. They're out there. You just gotta find 'em.
I worked in Pawn Shops for many years. The independent shops I always try to hit when I find them. It's amazing the things I have found over the years in those shops. In particular the small town shops. Many times they may have an item that has no market where they are and only want their money back for something they pawn. Normally will try and get double what they pawned an item for. I have made a LOT of $ buying in pawn shops, then restoring gear and reselling. The corporate shops will sell on sites like EBay, but many of the independents won't.
You have to know your stuff, but if you do and play it right, you can really do well over time. I sure have!!

If it's a corporate shop, they will and never put an item on the floor many times. The employees will fight over an item to list it as they make a commission on it. In an independent shop, many times they won't. The trick is to know where to look and how to deal. Also, ALWAYS have CASH if you can! Catch a shop that is low on cash at the right time, they may sell cheap as can turn that cash into a pawn and make more in the long run that trying to get full price on an item.
You can do well if you understand the game! I do because I have worked in those shops for many years.
