Can anyone tell me how to wire a switch to change a master tone control to affect only one pickup?

Currently two humbuckers, but it may go up to three. And the reason I ask is so that I could possibly move a tone control to one pickup or even one coil of a pickup, while putting it out of phase with the others, so that it cancels fewer frequencies.

The tone control is a simple low pass filter.......much of the cancellation that occurs to make OOP thinner or lower volume resides in the middle frequencies.
The best option there is to have volume control for one pickup - as soon as 1 pickup is away from full volume the OOP effect is much diminished. If you wish to have it switchable, then maybe a resistor can be added in by switch.

I generally add just a capacitor to my phase switch, I just thought there might be a way to make it variable, rather than being stuck with whatever values I have lying around.

If you have both pickups on, then the tone control will affect both of them.

Yes, I'm asking how to add a switch so that it doesn't affect both pickups.
Standard Stratocaster wiring had one tone for the neck, one tone for the middle, and no tone control at all for the bridge. I'm okay with the other pickup being brighter when the switch is engaged.
Anyone?

Originally the Strat only had a three way switch. You couldn’t have two pickups on at the same time. The neck and middle tone controls share a cap. When you have those two pickups on at the same time, either tone control affects both pickups.
You can wire the control to that side of the pickup selector switch to control that pickup. Use a switch to change where it’s connected.
An easy way to not have too thin a sound when out of phase is run one pickup through a cap to roll off some low end. You can try a .005 or .002 uF cap. It can be wired right to the switch.

Ah! Easy. Put the cap in parallel with the pot. That way you can bypass the cap gradually.
I found this online. Usually you want a 1 Meg pot
