I was wondering what is the best neck:

1 piece
2 piece or
3 piece?

My favorite neck of all time has to be the neck from my Grandpa's 56 strat. one big chunk of maple. that was a great guitar.

Well, the less "pieces" in a guitar, the better. You theoretically get better resonance. One piece neck, one piece body, etc. The neck is all about feel though. I usually don't buy anything with out a one-piece neck, just a personal bias of mine.

I'm thinking a 2 or 3 piece neck would be more stable? Less inclined to warp.

A quality neck that is taken care of should last a lifetime without warping.
