pickups for custom

I just ordered a guitar from warmoth, its a 5a quilt maple top, mahogany back
chambered Les Paul style body .... but anyways i am wondering what pickups i should put in it i play music ranging from the allman brothers to phish to pink floyd.

I probably go with a 59 and pearly gates bridge that are coil splittable

yeah i have had that suggested, ans also to use a 59/jb setup, what is the difference in tone
