While a dB meter would certainly be more precise, if your EARS can’t tell the difference then who cares? You can make yourself crazy trying to make things so perfect that you need a meter.

All this is assuming, of course, that you don’t have a hearing issue that keeps you from being able to trust your ears. Even then, I think I’d just use someone else’s.

Aim for "perfect enough." Perfect will drive you nuts because there is no such thing as perfect with guitars.

I tend to set overall pickup height then match the fingerboard radius with the poles. I tend to run a compressor most of the time, so small discrepancies are a non-issue to me.

Don't go looking for problems if you don't hear it. There are much more important things to focus on.
