The curve from 0 to 10 for the most part. Now how they differ is a better question.

Linear is better for tone pots and "audio taper" aka non-linear is better for volume. However there are never any hard fast rules to the tone game. It all boils down to what you like.

Regarding volume pots....Our ears like hearing volume changes in an audio taper..As mentioned already..."Normally" linear taper is for tone control.
