Which direction are the saddles in a TOM bridge supposed to go, with the slope pointing toward the neck, or the tailpiece?

Depends, some are setup to slope to neck on the 3 wound strings, and slope away from the neck on the 3 plain strings. It's about getting the most travel for intonation. On some brands, they can be reversed easily if need be. Others.... not so easy.

There are conventions, but no hard and fast rules.
