Ok, about the quack, is it important that it's there when simulating Edges sound? He usually uses the middle/bridge pickup, so if he has Dimarzio FS-1 in the bridge and the original Fenders in middle and neck, there will be a loss in the quack like you said. I'm not sure if that matters when it comes to his tone. Or maybe when he had the Dimarzios, he just used the bridge pup, I don't know. Also, what is your opinion on the Fralin Vintage Hot with the base plate? Some people say they're just about the name...

He also uses some rather nice Gretsch guitars. I've always wanted to get some filtertrons in a custom guitar, but alas there's this thing called money....

I would say maybe a Lace Sensor Gold or Silver. Gold is classic early 60s Strat single coil sound, beautiful and glassy and the silver is the same thing but fatter and with more mids.
Honestly, I'd be more concerned in how well you can play the songs than how close your guitar sounds to his. You can find something similar and still have a close tone to his, it doesn't need to be 100% exact does it?

Yeah. I have a Lace Sensor red in the bridge of my strat and the middle and neck are stock, and I play a couple U2 songs and manage to get a pretty close tone to his. Not perfect by any means, but close enough that it sounds like U2.

I'm not trying to directly copy his sound but I do want to get his tone. I love the tone of his Strat, that was the sound that made me want to learn guitar a few years ago. But only a few months ago I started working and getting money to really invest in quality gear. I bought an AC-30 a decent american Strat, a Gibby Les Paul and a few pedals. I just don't like the thin sound of the pups my Strat has. I think I need something with more output and more mids in the bridge. I think the Antiquity II will be my choice. I almost only use the middle/bridge position, would you say I could just get a custom bridge Antiquity pup, or should I get middle and bridge?

I have no experience with any single coil pickups except the 3 x Alnico II Pro Staggered set, but if it was me, I'd either go with all Antiquity Texas (with custom bridge model), or 3 x Alnico II Pro Staggered. Can't you tell I'm addicted to the 3 x Alnico II Pro Staggered?
I would think any vintage set of pickups from SD would work, such as the 3 x surfers, 3 x a2ps, 3 x atxh, or 3 x vintage staggered....

One more thing. Here in my country there are a few stores selling seymours. I found the legal dealer for SD here, and they have a custom bridge SD Antiquity there but they can’t specify me wich model is it. There is more than 1 model of the Antiquities for Strats right? The Antiquities II is what I’m after…

Anway, he had the FS-1 in his black Strat for the October album, but later had it unwound by a tech because it distorted too easily. All his vintage Strats (50s, 60s, 70s) have stock pickups, although some of them (such as the black 70s Strat you referred to) have custom-wound pickups in the bridge position. All this info comes from various guitar magazine articles.
Any vintage-output set should be fine: SSL-1s, Surfers,etc... You could put something slightly hotter in the bridge, but the FS-1 may be going a bit far for that clean tone you want.
The FS-1 is a great pickup, but it's more "Under a Blood Red Sky" than "Joshua Tree" IMO if you get what I mean.

Antiquities are amazing pups but if you want vintage strat sound with extra mids to fatten the sound up a bit, then go for a set of Fender Lace Sensor Silvers.

Well, with so many people recommending the antiquity surfers I ended up ordering a set with a custom bridge yesterday. There has been a lot of suggestions that one doesn't know what to do at one point hehe. I hope the Antiquities are vintage and hot enough to give me that Edge like tone presence. For those who already tried these pups, how do they sound, especially in the custom bridge? Is it hot or too thin and harsh? Anyway, I ordered from Music Store, they give a one month money back warranty.
