I have an Epiphone Sheraton on which everything has been upgraded. About a year ago I installed SD Saturday Night Specials in it. These pickups are relatively high output with a lot of mid range. It was awesome. I had a Fender Bassbreaker 45 2x12 combo that complimented this guitar phenomenally. I sold that amp because of how impractical the size is and bought a Blues Junior IV, which sounds great with the Telecaster. It's clear and chimey in every way that a Fender amp should be. These pickups overload this amp apparently. With this guitar, I cannot get a decent sound from the amp. It's muddy and dark and makes my amp sound so boxy. I'm thinking I need something low output with a more even EQ spectrum, or maybe even mid-scooped? I need help because I love this guitar and cannot currently use it. What are your suggestions?

Preamp tubes are cheaper than pickups, and easier to swap than are electronics in a sheraton.

If you do want to swap pickups, I went down a similar path a few years ago. I initially had Seth Lovers, loved them, but wanted more sparkle, so I installed Phat Cats when they were firsy intro'd. I kept them for a long time, but they still pushed a bit too hard and were a bit too meaty for that guitar. I ended up getti g a pair of TV Jones pickups for it (a Magna'Tron and a Classic Plus), and haven't looked back since. Has a ton of pop and sparkle, but still has enough meat for overdriven leads.

I've thought about getting some vintage voices P90's. Bare knuckle makes a humbucker sized p90.

Have you tried turning down the volume knobs on your guitar. That will brighten the tone and reduce the output so you don't push the amp so hard. It also will leave that extra power available when you want it or should you get a different amp in the future.

Changing the preamp tubes in your amp to very low output tubes is also an inexpensive solution. Try 12AU7 or even 5751.
