C, V, U, etc. are all used to describe the curve on the back of the neck, the part that rests against the palm of your hand. I bet if you found a neck with a sharp V profile (like Fender's Lite Ash Strat for example) you'd understand pretty quickly, especially if you had a regular C shape to compare with. My personal favorite is the assymetrical shapes like the neck on the SRV strat and the Peavey Wolfgangs (it's thicker on the bass side of the neck, make a C with your hand but keep your fingers fairly straight and you'll pretty much see how it's shaped)
