Hi Im reading up on how to change guitar PUs and it seems everything I've read suggest that when changing pickup one is better to unsolder from the pot and solder the new PU wire back onto the pot. Is there anything wrong with just hooking and soldering the shortned new PU wire to the already existing wire connected to the pot. This seems a lot easier to me....I have very little soldering expirence so maybe im overlooking somthing.....

For all intents and purposes.... really, truly, honestly.... it doesn't make a whole lot of difference.
You're more assured of a good connection with no further problems from soldering to the pot - being that there's much less chance of movement occurring at the solder joint and creating a cold joint... but...
Give it a shot anyway. You'll probably be just fine soldering to the existing wire.

Go ahead and do it, but wrap a little black electrical tape around your spliced wires.
IMO, it's better to utilize that hanging wire, just so you don't have to heat the pot up any more than necessary.
As a matter of fact, I've always had the idea of designing a tab that solders to the pot once, but looks like a mini metal glove with terminals to solder grounds to.
