Starting to plan now for having my Strat neck finished

Can't really help ref the finish, but both those are going to look great!

With satin back and poly front you probably meant gloss instead of poly, right? Polyurethane is one of numerous bases for paints and lacquers. It's the hard polymer coat that is left on the surface we call a finish. Satin is best achieved with mattifying paste that is mixed with your POLY clear coat before spraying. For sating-gloss combo you have to mix two batches and mask it differently each time.
Spraying gloss and then rubbing it with steel wool won't give the factory finish.
