I had never heard of leftys needing special pickups, but everyone at work is thouroughly convinced that left-handed pickups exist and are wound differently than right handed pickups. Anyone care to shed some light on this?

It's really just a matter of polepiece stagger. Humbuckers with adjustable polepieces can be adjusted for left or right handed guitars...you can do it yourself. Hendrix just used regular Strat pickups and lived with it. But you could get flat poled Strat pickups, like the SSL-2. That way it wouldn't make any diff whether you put them in a left handed or right handed guitar. John plays left handed...maybe he'll have some suggestions too. Lew
my guess is, although I have no knowledge on the subject of ambidextrousness... if they make left handed guitars, they HAVE to make left handed pups, and I think Lew's right about the pole piece thing
