Anything made after the early '90s has a swimming pool route so that a humbucker can be thrown in place of a single coil and finding pickguards to accompany the humbucker isn't difficult at all. If you look carefully, you can find them for under $500 and the build quality is very good. I picked up my main guitar, the Skyhawk, for $350 on eBay.
Kramer and Charvel make quality guitars, but you either need to buy a higher end model today or purchase a used 80s instrument to get the quality. Carvin seems to have been consistant quality wise. However, I'd buy one used because the resale value is crud on them and I'm sure you could get a good buy for dirt cheap.
