I have a Fender 6 Saddle Ashtray bridge and the bridge cover for sale.

The cover. It should be standardized enough to fit my GFS... Or does the Fender have a sort of catch on it that keeps the tray from sliding off?

What is a GFS? The cover just pushes on there.... only pressure keeps it on the bridge. Your bridge needs to be the ashtray style though.
