I'm not a pickup winder, but I know James at Rewind Electric winds his bridge pickups with varying coil offsets for the pickup itself and also b/w the neck pickup. Having owned several of his winds, that are of similar specs, I haven't heard a huge difference.
And yes, $500 is a lot of for a normal set of pickups. Some winders have stashes of vintage coil wire that Gibson or Fender used back in the day and they barely charge a little over what Throbak is charging. The one thing I do like is their plastics. They do look less cheesy and not over done. Jumping into the vintage replica game can be a huge rabbit hole.
