does it matter which way the adjustment screws face?
with the screw head facing towards the neck, or towards the stop tail?

No, it doesn't matter. Some people say it doesn't matter which way the saddles are facing either although I prefer to have the slanted side facing the stop tail piece.

Its often easier to get a screwdriver in for adjustment if the screws are pickup side. The saddle orientation can be flipped, the diagonal side toward the pickups gives more backward travel if the notes are sharp.
