Hey , can this be used for just recording and amp with a mic, without amp models or anything like that? I'm just looking for a quick and easy way to do clips once in awhile.

Yes it can. It has a dynamic mic input (no phantom power) and you just use one of the mic pre's like the Neve or API which sound really good.
