it does two things,IF you are speaking of some old original P.A.F's they were unbalanced simply because when they wound them the did it by sight,when the bobbin was full it was done and in turn some were mismatched resistances(EX, one coil at 4.6K and the other at 4K)
now this was not intentional back then but it made the pickup have better clarity on the wound strings and gave the pu a more overall glassier,brighter tone.
these days dimarzio does it intentionally,for two reasons, the first is a method of winding one coil with say 43 gauge wire and the other with 44,at different amounts of winds,
this makes the pickup have more harmonic overtones, and i unique tone.
dimarzio has patented this as "dual resonace" design. many dimarzio's feature this design such as the tone zone,fred, norton,steves special,air zone, megadrive(which was the first one with DR) and many other dimarzio's
