What seymour duncan single coil would you suggest that would give me a similar sound to that of Eddie's.

If you're wanting EVH tones in a true single coil, well I don't know about that. Maybe one of Duncan's "lil" pickups is in order if you're simply trying to get a pickup to fit in a single coil route. It would help a lot if you'd include what your amps and other gear is like, what guitar are you using, what period of VH are you talking about, etc.

My setup is as follows:
Amp: Hughes and Kettner Tri-AmpIII
Guitar: Fender '62 (but I bought a Squier that I want to do this experiment on)
VH period: The F.U.C.K album era 90's

Man, that's my dream- EVH tone in a single coil... but I don't think there's such a thing.
On F.U.C.K (my favorite VH album)- the neck humbucker was used for some solos so you'lle also need a neck bucker if you're going for his tone on that album.
He used a clean Strat on "Finish what ya started", and it still had the Eddie vibe... so I think tha you should jkust keep on working on his licks you'll get closer to the right area of tone - in terms of feel and touch - and that's also a hard task... add the right effects and that might even get you closer...

And don't stop looking for that pup. If you'll find one come here and tell me.

Someone used to have a clip of a twangbanger that sounded pretty EVH-ish (on toneninja.net? Kevlar3000?)

Get a Dimarzio Tone Zone S , that should get you close.

I was also thinking- a base plte under a single coil should give you more humbucker compression and mids and get you a little closer. With alnico 2 magnets the Twangbanger might be a good choice...

That probably would be great choice for early VH but he`s going for the `90s era VH tone.

Yeah, you're probably right...
Not sure if anyone would mind getting the VH tone of any era (maybe besides the tone he got on his last recordings).

Exactly what I was going to suggest. That's the only thing on the market in a single-coil size that is remotely close to what he used in that era.

He used a Tiesco Del Ray on "Finish what ya started", but a Strat in position 2 or 4 will get the job done too.

Great job suggesting capturing the vibe. I've been preaching that for months. Heck, I used my Texas Specials load Strat at rehearsal last weekend for "You Really Got Me". Worked like a charm.

I'm thinking Hot Strat for a non-humbucking single coil, or a 1/4lb for more highs and less mids.

+1 on the Tone Zone S in the bridge

Also, Air Norton S (new model) or Pro Track in the neck

Those should get you pretty close...
