I LOVE the Wolfgang profile (the real one, never played the Warmoth but I'm assuming it's close to the original). Fits like a glove.

I'd strongly recommend the Wolfgang profile. If you're not used to playing thin necks, you probably won't like the standard thin profile. The Wolfgang profile is thick, but not baseball bat thick. It's also slightly asymmetrical, which makes it a bit more comfortable to play.

which side of the neck is flatter and which has more shoulder, top or bottom? Since it's assymetrical.

It's shaped pretty much like your hand if you sort of make a C with your fingers straightened just a bit. The bass side has the fatter shoulder.

weird, that doesn't feel like it'd be comfortable at all. Like your thumb would rest on the most curved part.

Keep in mind that the neck really isn't extremely thick overall, check out the comparison diagram on Warmoth's site to see how they all stack up. That's probably the most comfortable profile I've ever played. In fact that's the shape I'm using on my next project.

I've got the standard thin and I'm not overly thrilled with it. The actual thickness is ok, but it's too rounded or something. It just isn't quite right.

If the Wolfgang is close to the Wolfgang profile on those Peavey's, I'd get that over a thin neck any day.
