I hear what your saying and understand it. I have hear bad modeling and it really turned me off to the idea. More amp modelers then effects although I don't care for Line 6 anything.

Well, I hear you. If you are looking for "that" amp - sure. Why not go get "that" amp then? But looking at it as a specific amp = great sound, IMO, is all wrong. I have certainly been in enough rooms with great amps that sounded all jacked up because of the guy who set the knobs. So I much prefer looking for great sound. I don't care where it comes from. So, if you are looking for a great "sound" this thing has six basic foundations, each with Level, Depth, Rate, and THREE other parameters like high/low/pre delay etc...depending.
Ima sayin you can get whatever mojotone uberultra tone modulator you think is out there - and this thing will either make it, or make something better, or so damn close it doesn't matter. Blind tests talk, BS walks. Each of those boxes modeled is iconic. What you want that could be more I can't imagine.
You like the VS H2O? Start with the Voodoo model. I think way too many people "find fault" with their eyes and their brains, and not their ears. As I have said before - you might be searching for guitarist X's amazeballs tone, he said he used X in a guitar rag, when in reality, the engineer used a POD. That crap happens way way way more than you think.
But - my opinion. You do/get what works for you.

My favourite has been the Visual Sound Chorus from the H2O pedals. I can't wait to find the money for the V3 H2O.

Sir, it's NOT about sound. It's about having cool stuff in your posession.
As for me, I like subtle chorus that doesn't sound too profound like that in Iron Maiden's "Deja Vu". DOD FX68 and that chorus effect on my Lexicon work pretty good so far.

As far as what is heard by others, that really doesn't matter to me other then I hope they like my tone but my tone is my tone and I work hard on it to get it to sound as I want it to. yes I'm at tone chaser but not for anyone else but for myself. I love it I love the gear and I love playing with it.
The Digitech pedal If I run into it, I'm gonna demo it especially after reading your opinion on it. Seems like a worthy test drive to say the very least.

I'm an older Guitar player , I started in 1979 at the age of 9, I'm now 46 going on 47. I like real amps, I like tubes I'm not a real fan of Solid state or any modeling I've ever plugged into. I haven't tried a Kemper or an axe FX as I heard they are amazing. I'd like to try them out but honestly I love how tubes sound, when they are new , when they start to wear and I like changing them out and getting that tone back. It's a process I've been doing all my musical like with Fender , Marshall, VOX , Peavey and Krank. Nothing like it.

And, IMO, go for a Visual sound H@O v2. TWO chorus flavors, and two delay lengths - one pedal. The ideal incarnation of this box for me.

I love my H2O V2. When I eventually get my V3, I hope to be able to do it without selling the V2.

I will say that our Catalina Chorus sort of has its own chorus sound going on...thicker and less hi-fi than the Boss, (you can tell it is on), and it does have that cool expression switch that allows you to add more chorus if you pick harder (or softer, your choice).

Sadly, this is a problem all over. But other esoteric pedals aren't in stock anywhere, either. If it isn't Boss or Digitech, it doesn't show up in stores.

Then there are the proliferation of big box chains... It's nearly an hour by highway in either direction from my city to find an independent music store... And the same chain store has bought or run all the mom and pop shops out of business in every city nearest to me. So, because there is no significant competition there is no choice of anything the big box store doesn't carry... It also doesn't help that the big box is also the national distributor of many of the top brands.... And the few independent stores left either can't get anything that competes with the big box's product or simply can't sell it affordable enough for people to chose them over the big box or web stores.

Moorer, tc electronics , MXR , Electro Harmonix I saw many of their pedals in stock. But it's extremely hard to find what you want when you go out and shop. I have 6 different shops near me and they just don't carry everything I would like to try. Russo's and Sam Ash seem to be the best out of the rest followed by 8th street Music. Those are the best stores around me. I got 2 Sam Ash Music stores close by which is nice. Guitar center is really turning into a joke.Sadly, this is a problem all over. When the V3 came out, I told the store owner that I was not interested and really satisfied with the V2. A couple of weeks later, I broke down and tried the V3 thorough an Orange. Immediate impressions were that this is a redesigned and more useful pedal and it seemed to sound better. Didn't have the V2 with me at the time to compare with. Only needed a few minutes to say "I'll take her home." Once home I put them side by side the V3's improvements really stood out. The V3 is really worth getting.
