When to adjust pickup...screws??

I've never fooled around with these.

What do they control??

I see Seymour touches them a bit in the les paul soddering video-clip but I have no speakers here and have no idea what he's saying.

Can someone explain please?

You mean the pickup poles? Sometimes one of the strings can sound louder or weaker in relation with the rest of the strings. You can adjust these poles to fine tweak each string volume.

once you get the overall output of the pup set in a sweet spot, you can mold the string-to-string balance by adjusting the individual pole piece heights relative to each other ..
