Halo Guitars offers some V, Explorer, and SG shapes. They're a bit more pricey, but you can get pretty much anything you want from them. Plus their configuration tool is top notch.

If he wanted to build his own, then Warmoth would be a decent choice, but he mentioned specifically that he wanted a luthier to do it.

"No matter the shape" and "V, Explorer, and SG" are two different things. If you want to hand-draw a guitar shape and have someone build it for you, you are probably looking at a built-by-hand-one-at-a-time one-person shop.
Warmoth does have V, Explorer and SG shapes, though those will be bolt-ons.
Perhaps because of the nature of set-neck builds, it seems to be a lot easier to find bolt-on/Fender-style custom builders than Gibson-style ones. For the latter, try Dunable Guitars, though their stock models have unconventional shapes.

I think what he means is that he's looking for a custom shop that will build him a guitar with the shape that he wants, whereas with something like Carvin, you're pretty much set to the shapes that they offer,and although Carvin offers more than even Gibson or Fender, they don't offer every shape that those companies do.

Lol I don't think many people can. Like I said, Halo is a great company that I'm seriously considering ordering from in the next year or so. I've pretty much become a full seven string convert and I'd like a super Strat style guitar with passives for a different flavor than my LP with actives.

They have their own standard shapes that they make, but one of the co-owners said on another forum that they also do custom one-offs, but don't advertise it.

I would say Warmoth and Musikraft can offer some very high end items...quality comes in how well the guitar is finished/assembled IMO
