I know because I owned the Valley Arts Larry Carlton Strat model (the actual name was Custom Pro), and both the Steve Lukather Valley Arts Strat and the Pensa-Suhr MK-1 passed through my workbench for repairing in the early '90s. Of course not the actual guitars owned by the artists, but the models that were sold to the public.
The answer to the question in the subject line is: the stock p'ups present in their instruments at the time the recording took place.

That's wrong in three counts. Larry Carlton and Mark Knofler used a 89, and Steve Lukather a 81.I was thinking about the EMG 85. it was used by Larry Carlton and Mark Knophler. Then you've got Steve Lukather
