I use a pair of SSL-5s in mine with a JB8 (mag swapped for an A8). The SSL-5s are medium output true single coils and they have the "single coil" sound. They are just a little louder so they balance better with the higher output of a JB.

I've just fitted lollar blackfaces in mine with the JB.
kept the 250k pots.
What a setup...position 2 is beautiful.
I keep the JB set low to balance the volume.

Nothing dark about the SSL-5s. They are true single coils voiced (IMO) like the classic strat PUPs of the day, only higher output. I am not a huge fan of the middle positions sound on a strat (regardless of pickup brand/model) but in neck/middle or middle/bridge it sounds great.
I am using 500k pots in my guitar. This works for me. Most start with 250k and work their way towards higher value pots as their tone wants dictate. As for brand, I am a CTS fanboy and stick with them pretty much exclusively.
