Can this be done with lets say a MIM strat?

have you done this already? Can anyone post a pic or two on a Fender
w/ dual Humbuckers.

Well... a dual HB Strat is called a Double Fat Strat, and is actually sold as a stock model from Fender

Exactly what I was going to say, EVH and Charvel proved 25 years ago that strats and Humbuckers DO mix

But of course you can buy a stock strat and mod it /have it modded to a H-H config as well...it will probably just cost you more than buying /building a DF Strat from the get go

Most of the non-vintage mass production Fenders have a swimming pool rout under the pickguard so you should be able to do it without having to rout the body.

The first Dual Humbucker Strat I ever saw was used by Glenn Tipton of Judas Priest back in the 70's... black with dual cream humbuckers... very cool! Check out the cover of Unleashed In The East... my favorite Preist album!
