Will SSL-1 RW/WP in middle position hum cancel with an SSL-5 in the bridge?

It will cancel some hum, but you need the same number of winds with the same wire to cancel the most hum.

The answer is yes, for the purpose of your question. The polarities are correct between the SSL5 and SSL1 so that's not an issue.

What Mincer correctly pointed out is "mismatched coils" will still produce a bit of hum because maximum hum canceling between two single coil pickups is achieved with matching coil windings and one pickup being RWRP of the other.

So yes, you're good to go except that notch position won't be completely free of hum.

Yep. It cancels hum. It doesn't cancel quite as much hum as two SSL-1s, but works pretty well.
