If I bypass the volume altogether I presume you just go straight from the pickup selector to the tip of the output jack right?

I never use my vol and have a kill switch on my planet waves cables if I need silence.

Also on the 3 way pickup switch I purchased:

Looking at it I can't work out which connectors correlate to the 3 positions and output? Which connectors do I use to follow the schematic?

Yes.

Connections go: blank, neck, neck, out, out, bridge, bridge, blank. Like this:
