Sorry, but I don't have one "go to" guitar. I have four. Any one of them will do it all but, depending on the time, place and genre, some do it better than others.

Super quality pics, and regarding the guitars themselves - they are each lookers, plus when taken altogether they cover the tonal spectrum from end to another. Awesomeness

When I'm writing or goofing off, my Epiphone Les Paul Custom and my Jackson USA SL1 Soloist are my go to guitars, and I do grab my Jackson DK2S Dinky quite a bit too.
The Les Paul has a Screamin' Demon bridge and a Pearly Gates neck.
I have no idea what the pickups are in the Soloist, except that they're Duncans, because I keep forgetting to pull them when I change strings. http://cdn.seymourduncan.com/forum/images/smilies/banghead.gif
And the Dinky is bone stock, so it should have a JB in the bridge, a STK1 in the middle and obviously it has a Sustainiac in the neck

And when playing with my band, my Gibson Explorer is becoming my main guitar. It just has the stock Gibson 500T & 496R pups in it for now, until I get ahold of a Black Winter set.
