3 pickups simultaneously + switching options

Question 1:

What does it sound like to have three pickups all engaged simultaneously, say, on a Strat? Does it sound much different from having both the neck and bridge on?

Question 2:

If I were to add a pickup to a Tele (2 pickup guitar), and I didn't want to install a new switch, would it be possible to add an on-off switch for the third pickup? Can on/off switches be wired in parallel with the other pickups?

I did this on my Strat for awhile. Its a very smooth, yet open-airy sound. Think "Sultans of Swing" tone. The cool thing about all three at once is, you spread the resonant peak of the three pups out over a wider range. No real bad dips or peaks in the frequency response. At least . . . thats what I assume is happening.

Its worth a listen if you haven't tried it.
