I think I'm going with the Sh-59,

I want to coil tap it, is their a particular model of that pickup I should buy in order to do that or does it matter?

Go with the 4 wire model. The 59 usually comes with a single wire like a vintage pickup. I have the regular 59 and I love it.

It should come stock with four conductor wiring. That's the only thing you need to worry about, unless you want to change the magnet.

so basically whatever pickup I go with I need the 4 wire version of it??

I assume, 2 wires per coil?

Yep. This is a Duncan diagram showing the coil tap thing:

The switch basically just grounds the coil that's closest to the ground.

I never liked those four conductor cables myself, but they give you all sorts of switching options like series or parallel coils, or the coil tap thing, or switching the pickup in or out of phase with the other pickup.

You could use a push/pull type pot instead of a toggle switch to make your guitar a little more sleeper.
