I think part of it is the low-pass filter that follows the clipping section where you get your distortion from (amp or pedal). If it cuts too much of the harmonic content, I think it's more difficult then. So while a high-output, bright pickup will help a lot, you need the other side of it too.
With a Proco Rat pedal, there is a knob that lets you control the frequency of this low-pass filter. If you turn it far down, pinch harmonics are extremely easy to get.
