Mixing the G12T75 and the V30 is a popular solution for hard rock and metal, because the T75 has scooped mids, big bottom and sharp treble, and stays relatively clean, while the V30 has strong mids and tight bass, and adds color and dimension to distortion textures. Since the V30 is louder than the T75 putting them in an X pattern in a 4x12 is popular. In a stereo cab you may want the V30 on bottom and the T75 on top-or maybe the other way.
Greenbacks have always been popular among shredders although its mostly associated with classic rock and blues. The New EVH speaker is a G12M20 Greenback. But it lacks the thump for some modern rock styles.
The G12H30 is strongly associated with Jimi Hendrix and Jimmy Page. It stays together better than the GB when being pushed, has awesome depth and dimension and sounds warmer than the V30.
The G12-65 is another Celestion speaker. It was the standard celestion speaker during the early 80's, so it obviously was much used for 80's metal, but is also well liked among blues artists like Robin Ford. The G12-65 is kinda like a GB, but with later breakup and stronger bass. Compared to the 75 it doesnt have the mids all scooped out.
So far these have all been Celestion speakers but EV's are popular for modern rock too. EV's are totally clean compared to Celestions.
Eminence makes clones of the popular Celestions that are called the Redcoat series, and they also make clones of American voiced speakers.
