I'd recommend a Nordstrand NVS standard set. I haven't tried the underwound or hot sets, but the standard is just so good.

I grew up playing my brother's 1995 Fender American Standard strat with stock Fender pickups. It had nice cleans, but no balls, so I figured I was a humbucker guy. I just recently replaced the Dimarzio Cruiser pickups in my purple Modulus with these Nordstrands. It made such a difference! Honestly, I think due to the clarity they have under heavy distortion as well as how pristine the cleans are, I'm more a singlecoil guy. I've bought two NVS standard sets on eBay in the last two weeks as well as a pair of Nordstrand NVH humbuckers. Just need to install those to see if the humbuckers are as great as their singlecoils.

Classic rock played on a Strat was done w/SSL-1s or equivalent. Look at vintage Clapton, Hendrix, Blackmore, Page (even though he did give his Strat to Hendrix), and Harrison, latter part with Beatles and after. Then you have Gilmour with Fat 50s neck, CS69 mid, and SSL-5 bridge. His neck & middle are of the vintage (SSL-1) variety. What you want to play will determine how far you want to deviate from this formula. This is the beauty of having so many options. Look where Yngwie took his interpretation of Blackmore.
