Bridge humbucker with sound and response of a Quarter Pound Strat???

What do you like more, the tone of the QP or the power level? No humbuckers really sound like a Quarter Pound to me- it really has its own thing going on. You could always get a single coil ring for a humbucker space and use an actual Quarter Pound in there.

in case of the first one i‘d say some humbucker sized p-90 style pickups might be your cup of tea

Try a GFS Bigmouth. They sound like a humbucking Quarter Pounder. I have both in the same guitar and they are a perfect match.
