I'm planning on getting it a little bit more unique than just unpotted. I was going to go for a full vintage treatment (butyrate bobbins, maple spacers, etc) so it is basically a Seth Lover rewound like he did in the 70s, which later became the Whole Lotta Humbucker, if that makes sense... Are the "Shop Floor Custom" pickups basically anything that already has a coil formula, but just modified for my specs? Or is it exclusive to what is stated in the list?

This is the official list of what falls under Shop Floor Custom options. They are significantly cheaper than full Custom Shop.

Wax potting for Seth Lovers falls under that. I can't imagine why non wax potted WLH wouldn't.

As I research these pickups more, I've found the pickup I would be ordering would be a "uncovered, unpotted Whole Lotta Humbucker with butyrate bobbins and maple spacers". Would that qualify as a floor custom or is that too different? It's not a big deal either way, I'm just curious.

Usually uncovered pickups are unpotted as well. The other options will probably require the full custom shop.

The list is pretty specific, but if you are in any doubt, contact the Custom Shop and they will let you know what the price will be. If you have any concerns, they will let you know what qualifies as a full Custom Shop pickup.
