Double thick magnets: effect on dynamics?

Putting a double thick magnet in a humbucker would of course increase it's volume output.

But how is dynamics affected? More or less compression?

What about tone? EQ? More highs? More bottom?

Higher output's effect on dynamics will depend on the amp. If there isn't a lot of headroom, higher output means more compression, less dynamics. Which is one of the arguments for relatively low output PAFs--though for many, the right overwound PAF is the holy grail.

If your amp has a lot of headroom, higher output pickups can be punchier, and can feel more dynamic, since you can reach into more distortion, and back off into less more easily.
