Higher output's effect on dynamics will depend on the amp. If there isn't a lot of headroom, higher output means more compression, less dynamics. Which is one of the arguments for relatively low output PAFs--though for many, the right overwound PAF is the holy grail.
If your amp has a lot of headroom, higher output pickups can be punchier, and can feel more dynamic, since you can reach into more distortion, and back off into less more easily.
