My amp is 60w and has 3 speakers. Each speaker is rated at 5.3 Ohms and is wired in series. So the whole amp is 16 Ohms. Does this mean if I put an extension cab on it should be a 16 Ohm cab? Because I can't find one anywhere.

I don't know how it knows the impedance you are ussing... Anyway you can use either a 8 or a 16 Omh cabinet with it. In case you want to replace the speakers you could use two 16 Ohm speakers and one 8 Ohm. If you wire them this way:
(16//16) + 8 = 8 Ohm
where "//" denotes parallel and "+" series.
Or you could use two 8 Ohm speakers and one 16 Ohm and wire them like this:
