I like the Gibson '61 in my Les Paul with maple neck for blues and for classic/hair/metal rock, just by playing with volume knob, you may find them for cheap on eBay.
I have a Screamin Demon in my Strat and it should work well in an LP with mahogany neck but it doesn't have a reputation to be warm/round, more cutting like a knife and "a bit" of single-coil character. Works well with almost any amp model I use in my Eleven Rack (Plexi, JCM800, JTM45, Soldano, Matchless, Bogner).
If you like the '57 in the LP, I would say like @chadd and keep both guitars as they are and use an OD for the LP when needed.
