Opinions are like a--holes, everyone has one. For what it's worth...here's mine.
A lot of what you're asking depends on the amp your using. I am of the school of thought that you use pickups that are more transparent, lower output, and let your guitar tone any playing style come through. You then use your amp and limited effects to make your tone heavier. People used to use higher output pickups to drive non-master volume amps into overdrive sooner. With modern amps that is not as necessary.
I am able to cover a wide variety of tones and bands with just my pair of APH II's and my Marshall. I am famalier with some of the bands that you listed, specifically AIC and STP. I would bet that I could replicate several of the songs using a 59' bridge, APH bridge, or C5 bridge and that it would be hard to tell the difference between them by the time effects were added to make it sound similar to the original.
I guess what I'm saying is that a set of 59's would be great if you wanted a tighter, slightly brighter tone, or a set of APH's if you wanted the lows and highs to be slightly softer.
