Awesome point. I personally don't think a guitar full of pickups, coil-taps, phase switches and whatnot, make it any more "versatile" than a Les Paul Jr. with a single P-90, if the player is not up to par. Using effects, amp models and most importantly technique, you can make the simplest guitar sound like anything you want.
Also, this thread is a "what would YOU do" advice thread. Take it or leave it, but if you ask what WE would do, you aren't always going to get answers YOU want. Not every guitar player is good with tools and setups, so I don't expect my advice of a DIY guitar is applicable to everyone.
I would personally find a guitar you like and make it work for you. Then focus on technique and subtle nuances of those specific styles.
